Ingredients:-
2 pcs. Dried Squid,
1 cucumber ( sectioned)
1/4 young celery (peeled & sectioned)
1 bowl black fungus (few pcs soak in water until tender, drain & cut smaller)
Some shallots & garlic (sliced)
材料: -
2 塊吊片(生曬鮮尤)
1 條勝瓜或青瓜(刮去硬凸皮,切長塊)
1/4 個西芹芯(撕根,切長塊)
1 碗雲耳(取數只干雲耳浸水後,切塊)
紅䓤頭及蒜頭數只(去衣切片)
Method:-
1) Dried squid take out the hard part ( use a big bowl of water + 1 tsp bi-ca soda),
soak for 1-2 hours until tender. Take out, tear the red skin off, rinse and
cut into pc. with pattern.
Marinate with soya sauce, ginger wine, white pepper, sugar & corn flour for an hour.
2) Heat oil, add veg. & fungus, salt & 1/2 bowl water stir fry until tender, take out.
3) Add oil fry shallot & garlic until smell, put in marinated squids, stir fry until
all roll up is done.
4) Add the veg. to the squid, stir for a while, seasoning with (oyster sauce,
sugar, pepper, wine, corn flour and 1/2 bowl of water) mix well until the
sauce all absorbed. Dish up & serve.
做法:-
1) 吊片取去硬身(用大湯碗水加1 茶匙梳打粉或1 湯匙梘水)浸約 1 小時至厚軟。
取出撕去紅衣,切件界花。
加入生抽,羌汁酒,古月粉,糖及粟粉醃 1 -2 小時入味。
2) 下油炒西芹,勝瓜及云耳, 加入少許塩及半碗水,炒至軟身,取出備用。
3) 下油爆香干葱及蒜片,倒下已入味之吊片,兜炒至全捲起至熟。
4) 下菜料和吊片同炒匀,加入汁料稠味(蠔油,糖,古月粉,酒,粟粉及
半碗水)兜炒至汁料全吸收,上碟供食。
#. This dish can cook more quantity and save some for Stir Fry Noodles next day.
Only every ingredients cut into thin slices. Pan fried noodles until brown,
add sauce :- oyster sauce, soya sauce, sugar, wine, while pepper, water & flour.
Cook until sauce absolved. The squids match with fried noodles perfectly.
