CHINESE STIR FRY 2 -San Choi Bow with Dried Oyster Golden Hair. 金絲蠔 士 鬆生菜包(金絲好市生財包)

Ingredients:-
#Left over of the Dried Oyster & Mushroom.#
Dried oyster 4 pcs. Soak over night with water. Drain & dice.
Black mushroom (soak & drain,, dice & marinate in basic taste.)
Some black moss (soak until soft with oil & water. Drain.)
1 pc. Bamboo shoot. ( diced)
1 pc. Chicken breast ( dice & marinate in basic taste)
1/8 celery (diced)
2 egg. (beat & deep fry in oil through sieve until golden & crispy)
1 pack of spring roll pastry.(or use Lettuce- wash & cut round pcs.)

Sauce:- 2 tbsp Chu Hou Sauce, 2 tbsp water, 2 tsp sugar & 1 tsp corn flour.
Stir cook to boil. Test taste & take out.

材料-

蠔士浸水過夜,隔水切粒。
冬菇浸軟, 隔水切粒,稠味。
髮菜用油、水浸軟隔水備用。
冬筍 1 塊切粒。
鳮胸肉 1 塊切粒稠味。
1/8 棵西芹,撕筋切粒。
旦 2 只,打勻。用熱油,倒旦汁穿過篩炸出旦絲至金黃香脆。
春卷皮 1 包。(或可用西生菜洗淨,剪成圓塊)

汁: - 柱候醬 2 湯匙,水 2 湯匙,糖 2 茶匙及生粉 1 茶匙,搅煮至滾,試味盛起。

Method:-
1) Heat oil 2 tbsp stir fry chicken meat until done, add in all ingredients stir fry, braise for
a while with oyster sauce, sugar, wine, white pepper & sesame oil, thicken sauce
with corn flour solution. Done!
2) Arrange on plate, put the fried crispy egg hair on top, wrap with spring onion pastry,
and put a bit Chu Hou Sauce before wrap.
# this is a lucky dish for New Year, it means you catch all the jewelry in your pocket.

做法:-
1) 熱油 2 湯匙炒熟雞肉粒,加入所有以上材料兜炒,倒下蠔油、糖、酒、古月粉、麻油
煨煮片刻, 生粉水埋芡。
2) 兜放碟上,面中央舖上炸旦絲,用春卷皮或生菜片包住吃,包前放少許柱候汁在蠔士
鬆上,更好吃。
# 這是一度新年意頭菜,意思是金銀珠寶都在你荷包中。
