CHINESE SEAFOOD 1 -Deep Fried Link Fish In Golden Paste. 黃金炸魚塊. (金 磚 轆轆、金銀滿屋)

Ingredients:-
1 big pc. Link Fish Fillet (sectioned)
4 pcs of Zucchini Flowers
3 pcs Cooked Salty Egg Yolks.

材料:-
急凍或新鮮魚柳 1 大塊 (直紋切件)
青花花 4 只,熟咸旦黃 3 只。

Batter:- 1 cup self-raising flour, 1 tsp salt, 1 tsp white pepper, 1/2 can of beer,
2 tbsp oil,mix well for use.

脆漿料:- 自發粉 1 杯,塩 1 茶匙,古月粉 1 茶匙,啤酒半罐,油 2 湯匙,
撹勻備用。

Method:-
1) Fish pcs marinate with salt & white pepper.
2) Coat the fish with corn flour, and put in the batter, take out
and put straightly to the high heat oil to deep fry until slightly brown,
take out and leave it to cool.
3) Reheat the oil, put the fish to fry second time until golden brown & crispy.
4) Dip the Zucchini Flowers in batter & deep fry until crispy, take out.
5) Add a bit oil stir in the salty egg yolks, add a bit water stir become paste like;
put the crispy fish in the salty egg yolk paste, to let it coat all over the fish evenly.
Dish up & serve!

做法:-
1) 魚塊用少許塩及古月粉稠味片刻待用。
2) 魚塊洒上粟粉,再沾上脆漿;用大熱油炸至微黄,取出待涼。
3) 再熱油,魚塊回鑊炸第二次至金黄香脆,盛起。
4) 金花沾上脆漿,大火炸至脆身,備用。
5) 下油少許爆開咸旦黃,加少許水使之攪開成糊狀,倒入脆魚塊兜勻至平均
沾上旦黃。裝飾上碟。
