CHINESE SEAFOOD 8 - Fried Yellow Pomfret balls in Black Bean Sauce w/Bitter Melon 豉汁涼瓜炒黃立䱽球

Ingredients:-
800g Fresh Yellow Pomfret
1 Bitter Melon
3 braids Garlics (mashed)
2 tbsp Black Beans (mashed)

材料:-
新鮮黃立䱽 1 條 800克
涼瓜 1 個
蒜頭 3 粒(挅碎)
豆豉 2 湯匙(挅碎)

Method:-
1) Wash & dry the fish. Cut out the meat from both sides of it carefully. And slice
the meat in thick pieces, marinate with some salt and white pepper.
2) Rinse bitter melon and discard seeds, cut long slices, marinated with a pinch
of salt, put in boiling water for a while and then under running water. Squeeze out
excess water and leave for further use.
3) Heat oil and put the fish pcs in for 2 mins and take out.
4) Then powder some corn flour on the fish bone and deep fry until brown & crispy,
take out and arrange on the plate.
5) Sauté garlic and black beans, add sauce:- 1 tbsp light soy, 1 tsp sugar, a pinch
of white pepper, 1 tsp sesame oil, 1 tsp corn flour & 1/2 cup water.
6) Add in the bitter melon stir fry for a while, put the fish pcs in and sauté until sauce
all absolved, take out and put over the crispy fish bone. Dish up and serve immediately.

做法:-
1) 魚洗淨抹干,小心起出兩面的肉,然後切厚塊,下少許鹽及胡椒粉略醃。
2)涼瓜洗淨去籽,切長条,洒上少許鹽,放入沸水中出水2分鈡,取出過冷河。
揸干水備用。
3)開油镬放入魚塊走油2分鐘取出。
4)再放入已撲粉之魚骨炸至金黄香脆,取出放碟上。
5)熱油爆香蒜茸豆豉,加入汁料:-生抽 1 湯匙、糖 1 茶匙、胡椒粉適量、麻油 1 茶匙,
生粉 1 茶匙及水半杯。
6)加入涼瓜炒片刻,放入魚塊炒至汁收干,取出放在脆魚骨上,趁熱上桌供食。
