Ingredients:-
1 Fresh Barramundi 500-700g (scaled, washed & dried)
2 Eggplants or Bitter Melons (washed, discard seeds & sliced)
2 Fried Bean milk sticks (soaked & sectioned)
2 stalks Spring Onion (sliced)
1/4 bowl red & green pepper (diced)
2 braids garlic (chopped)
A pick of ginger slices.
材料:-
新鮮盲鰽 1 條 500-700克(去鱗洗淨,瀝干備用)
茄瓜或涼瓜 2 條(洗凈去籽,切條)
已炸支竹 2 條(浸軟切段)
蔥 2 條切絲,
青紅椒碎粒 1/4 碗
蒜頭 2 粒(挅碎)
羌絲少許
Method:-
1) Dried the fish, touch with a bit salt & pepper, powder some corn flour
cover the whole fish. Heat pan with oil to fry the fish until both side golden.
2) Scald eggplants or bitter melons in boiling water 2 mins., rinse & drain.
3) Sauté ginger slices, garlic, peppers with 2 tbsp oil.
Add sauce:- 2 tbsp bean paste, 1 tbsp light soy, 1 tsp sugar, 1 tsp sesame oil,
a bit white pepper, a bit Chinese wine & a cup of water.
4) Add eggplants or bitter melons, bean milk sticks into the sauce and braise
for a while,add some water if necessary.
5) Add the fish in and braise for 10 mins. Until the fish just well done and absolve
the sauce, put the corn flour solution in to make the sauce thicker. Sprinkle
the spring onion slices on top, dish up & serve hot.
做法:-
1)盲鰽去鱗洗浄抹干,抹些鹽及胡椒粉稠味,全魚撲上生粉;熱油煎至兩面金黄。
2)茄瓜或涼瓜出水2分鈡,取出過冷河,瀝干。
3)熱油鑊爆香羌絲、蒜茸、青紅椒碎。
加入汁料:- 麵豉醬 2 湯匙、生抽 1 湯匙、糖 1 茶匙、麻油 1 茶匙、胡椒粉、
紹酒適量,淸水 1杯。
4)下茄瓜或涼瓜條,支竹等同炆片刻至入味, 期間如汁太干可加水。
5)加入煎魚炆煮 10 分鈡至魚吸收汁料及剛熟,加入生粉水埋芡。上碟洒上葱絲,
趁熱享用。
